Our bread knife re-serration service — Blade & Butler

At Blade & Butler we receive many bread knives to sharpen.

Customers give us discretion on how we approach the sharpening of their serrated knives as different brands present with different tapers, blade thickness and serrated tooth signatures.

95% of bread knives received in are sharpened in the most non invasive way possible by thinning down the blade behind the serration. This leaves a super fine bur of no more than 0.3 - 0.5 of a millimetre along the serrations giving the knife a new keen edge.

Bread knives with thin tapers such as Global, Victorinox,Wusthof, Shun,Yaxell and others, greatly benefit from this style of sharpening and do not generally require full re serrations unless old and excessively worn.

Experience informs us this method brings the serrations back to life and makes for an excellent cutting capability whilst only reducing the serrations by a fraction of a millimetre. Your bread knife will be filmed performing our QC test before being shipped back to you to ensure sharpness compliance.

If no direction has been given at Checkout regarding the sharpening of your bread knife and your bread knife has passed our QC test this service is considered completed to agreed requirements.

Some brands present with thick tapers or large, deep serrations. In these instances we will thin down the cutting edge so that the serrations remain the same size however they will now be more effective in cutting as the teeth will be thinner.

Customers agree to allow us to use our discretion, based on our knowledge and experience, in how we approach the sharpening of their serrated edge unless they leave us direction in the comments section at Checkout.

If customers feel that a bread knife has worn serrations we advise customers to leave a comment at Checkout requesting our full re-serration service or at the very least, our evaluation, with the option to re serrate fully if we deem this appropriate.

As re serrations are done free hand and not by machine the new serrations will differ slightly from the originals, therefore for aesthetic reasons there are specific T&C's ( section 7.3.3 ) regarding our re serration service. See here.

Below is an example image of a Gustav Emil Ern Solingen bread knife before and after re serrating.

Please note that these images are guides and not representative of every bread knife re serration. Each knife we receive is unique and so the outcomes differ very slightly.Occasionally due to steel composition on some brands a tiny microscopic bur may be present in some serrations. This is not seen with the naked eye from a distance of 60cm ( pls see our tolerances section in our FAQ's ) and does not negatively impact the use of the knife in any way.

Our re serration service is for bread/pastry knives only. We do not re serrate micro serrations.

Here the original blade is sharpened to a thin bevel to increase finished sharpness and new serrations have been created starting from the handle.

New serrations are continued to the end of the blade and a polish and buff finishes the service. The knife has now been restored to a perfect sharpness and will cut the hardest of loaves for decades to come. All at a fraction of the cost of a new knife purchase!

And all at no extra cost!

( because we're nice like that )

Below are examples of micro serrations sharpened from the back side only.
