Tog knives. The British / Japanese hybrid
TOG is a British-designed knife brand whose kitchen knife blades are handmade in Seki, Japan. Its distinctive laminated steels incorporate visible copper layers running through the blade, producing the beautiful copper veining for which TOG has become known. Depending on the model, TOG uses steels including AUS-10 and Acuto 440 within its multi-layer construction.
We like TOG knives. Their steel is relatively forgiving and straightforward to maintain, which is a positive rather than a weakness in an everyday kitchen knife. They sharpen beautifully and, when professionally polished, the contrasting steel and copper layers can look spectacular.
They are good-looking, practical knives that respond extremely well to servicing. You'll find several examples of TOG knives we've worked on in the Blade & Butler homepage image carousel.
