Robert Welch is a hugely popular British kitchenware brand, and its knives are amongst the most frequently encountered in our workshop — we service dozens every week.

The knives use German X50CrMoV15 / 1.4116 stainless steel, generally hardened around 56 HRC in the Signature range.

The steel itself is perfectly respectable — we would rate it around 7/10 for this type of kitchen knife.

Where we are less enthusiastic is the blade geometry. In our experience, many Robert Welch knives are simply too thick behind the cutting edge, which compromises cutting performance.

Because of their poorly designed taper, we frequently recommend thinning them as part of a professional service. Once correctly thinned and sharpened, the improvement can be considerable.
