Miyabi. Excellence from Seki, Japan.
Miyabi knives are made in Seki, Japan, combining Japanese knife-making traditions with the engineering expertise of their German parent company, Zwilling. Across the ranges you'll find everything from FC61 steel to extremely hard MC63 micro-carbide powder steel, together with some spectacular multi-layer Damascus designs.
We think Miyabi make superb knives. They are typically lightweight, beautifully tapered and extremely thin at the cutting edge, making them particularly good for precision work, sushi and fish preparation.
Their fine geometry allows them to take an exceptionally sharp edge when professionally serviced. A genuinely excellent Japanese knife.
