Furi Knives – Australian Design, Good Steel & One Important Caution
Furi is an Australian knife brand producing distinctive kitchen knives that are immediately recognisable by their modern styling and, on most models, all-stainless-steel handle construction.
From a sharpening perspective, we rate Furi knives quite highly. The steel is good quality and responds very well to professional sharpening, producing a keen and durable cutting edge. The blade geometry is on the thicker end of the spectrum than we would ideally like. This doesn't make them poor performers – far from it – but as the knife is repeatedly sharpened over many years, both at home and professionally, occasional thinning can help maintain its original cutting performance.
Overall, they are good all-round kitchen knives and capable of giving many years of service.
A Word of Caution About Furi Handles
There is one aspect of some Furi designs that we think owners should be aware of.
Certain smaller Furi knives and paring knives have relatively short, smooth stainless-steel handles. When your hands are wet or greasy during food preparation, these handles can become slippery.
With a small handle and no substantial guard between the hand and cutting edge, there is a possibility of the hand sliding forward towards the blade. We therefore recommend taking particular care when using the smaller all-metal Furi knives with wet hands.
